We're excited to release our newest collaboration with Dak Coffee Roasters from Amsterdam, Netherlands.
Finca Anaya, Acevedo, Huila, Colombia | 1,600 masl Strawberry compote, candy, dulce de leche
This lot uses a co-fermentation process: natural microorganisms are activated with chopped red and green apples and fermented for 48 hours, then combined with whole ripe Ombligón cherries in sealed tanks for another 48 hours. The cherries are slow-dried in marquesinas over 12 days.
The result is jammy fruit sweetness with a rich, caramelized finish.
Espresso and filter roasts are interchangeable. Espresso is sweeter with lower acidity; filter is brighter.
